One important thing to know about Wil and I, is that we love sweet treats. When I say "sweet treats" I'm referring to anything from cookies, to cupcakes, to ice cream, to healthy snacks and more. I particularly have a sweet tooth and blame this partially on my mother who had homemade baked goods sitting on our stovetop everyday; and still does to this day. I became spoiled with homemade ice cream, homemade scones and every other dessert imaginable- I honestly did not know what a store bought pie crust was until I saw one at a friends' house.
Lucky for me, I married someone that enjoys sweets just as much as I do. Wil and I like finding new recipes and creating healthier versions of traditional treats. That being said, one evening we were craving a sweet that wouldn't do a ton of damage to our healthy eating plan. We did some research and found a recipe for a protein ball. We tweaked the recipe, made it our own and low and behold, the protein packed Peanut Butter Ball was born!
Although this recipe doesn't really match any traditional dessert I can think of, the closest thing I would compare it to would be a "Buckeye" without the chocolate coating.
First off, these little guys are super easy to make and are great for days when you want just a little bit of sweetness. The best part is, there are only four ingredients and they take less than five minutes to make- which is great for those of us on the go.
Ingredients needed are:
1 cup Natural Peanut Butter
1 cup Honey or Agave Nectar
1 cup Flax Seeds
1 cup Protein Powder (Chocolate or Vanilla)
Dark Chocolate chips (not necessary)
There are really only three steps involved in making these. First, mix all of your ingredients together- I start with the wet ingredients and then add in the protein powder and flax seeds.
Once you have mixed it well, line a baking dish (or any other container) with wax paper and roll the mixture into bite sized balls.
Once you are finished making the balls, place them into your freezer or refrigerator until you are ready to eat them. Note: if you put them into the freezer they will not completely freeze- I personally like this consistency best.
Also, if you want a smaller amount, you can half the recipe and use 1/2 cup of each ingredient instead of a full cup- they taste just the same.
